Hot Dogs on the Grill!
Let's try some new ways of grilling your dogs

Everyone knows about hot dogs! Every kid knows about hotdogs! But lets look for some fun and tasty new ways to dress them up?

Buying your favorite hot dogs.

Ok, probably everyone has their favorites. Mine are the Hebrew National 1/4 dogs, all beef. I also love Polish sausages, once again Hebrew National. 

As far as the other types, turkey dogs, chicken dogs etc, I have not found a brand that I really have settled on, but I keep trying.

Grilling the Hot Dog?

I think that the basic hot dog cooking technique likely does not need a whole lot of discussion here. What we will talk about is different types of hot dog presentations that go beyond the basic dog. 



What the heck is a Quesadilla-dog?

When I was working in Cabo San Lucas at Hotel Hacienda Beach Resort, Ramon the food and beverage manager and I had just opened a new beach restaurant. It was Easter week and there were a bunch of kids running all over the beach and we were looking for something fun for the kids. The result was a Quesadilla-dog.


Randy Style Quesadilla-dog with Chili

My dad loved chili, chili dogs, chili steaks of just plain chili. I guess I inherited that! Here is my version of Quesadilla-dogs!

4 servings

4 1/4 lb hot dogs or polish sausage

4 flour tortillas 

4 cups cheddar, jack, colby or provolone cheese grated

4 tablespoons red onion or green onion finely diced

2 cups chili con carne, your favorite type

Grill your hot dogs or polish to your desired degree of doneness, place in warms spot on the grill. Heat your flour tortillas until they are soft, do not let them get crisp. spread about a half cup of the grated cheese on a hot side of the tortilla. Place the hot dog on one side and roll it up. Place over a medium low side of the grill with the side with the opening overlap down. This will allow the cheese to melt there first and hold it closed. Do this with all the quesadilla-dogs and keep an eye on them to make sure they don’t burn. Roll them to cook and get light grill marks on all sides. When they are heated, cheese melted, then they are ready to go. Plate them up cover with equal amounts of chili, the remaining cheese and red or green onion. 


These puppies are done! 



Quesadilla-dog ala Ramon

Ramon was our F&B director at Hotel Hacienda Beach Resort in Cabo. Ramon is a great guy and we had a lot of fun working together and we became good friends. This was Ramon's version of the Quesadilla-dog.

4 servings

4 1/4 lb hot dogs or polish sausage

3 cups cheddar, or  jack cheese grated

4      strips bacon crisp ( I like to chop it up)

       Salsa on the side

Grill your hot dogs or Polish to your desired degree of doneness, place in warms spot on the grill.
