Indian Cooking and Grilling Spice Rub


This Indian cooking and grilling rub brings the underlying flavors of Indian cuisine to the grill. The flavors are very complex and work on just about anything. Also these spices are amongst the strongest antioxidants in the spice world, very healthy!

¼ cup whole coriander

2 tablespoons whole cumin

2 mustard seed

2 tablespoons whole fennel

2 tablespoons white peppercorns

1 teaspoon cayenne pepper

2 tablespoons kosher salt

1 ½ tablespoon ground ginger

1 ½ tablespoons ground turmeric

Toast the coriander, cumin, mustard, fennel, peppercorns in dry skillet over a medium heat until they become fragrant, do not allow to burn. Move to a spice grinder, coffee grinder or mortar and pestle. Add all other spices and grind or pulverize to coarse powder.

Store in an airtight container.
