Argentine recipes 
The way to start is the Chimichurri sauce

We love the bold flavors of Argentine recipes. The melting pot of influences have come together to create wonderful flavors and their own indigenous cuisine.

We will start with an Argentine favorite, the Chimichurri sauce. It has a great garlicky herbaceous bite. Here are a couple of great Chimichurri Sauce variations.

Chimichurri

This Chimichurri is the basic sauce and hard to beat on grilled beef, chicken or lamb!

1 cup Italian (flat leaf) parsley

1 cup cilantro

3 tablespoons fresh oregano

4 cloves garlic

2 tablespoons red wine vinegar

1 tablespoon lime juice

1/2 cup extra Virgin olive oil

1 1/2 teaspoons red chile flakes

1 teaspoon coarse ground black pepper

Kosher or sea salt to taste

In a food processor place the garlic and fresh herbs in the mixing bowl. Pulse a couple of times to chop, add vinegar run pouring olive oil in a thin stream slowly to incorporate. Pour into bowl add peppers, adjust salt and pepper and chill for one hour.

Pull out 1 hour prior to serving.

Guacho Chimichurri

This recipe is a bit more complex with the addition of sherry vinegar adding a Spanish influence to it.

1 cup Flat Leaf Parsley

1 Cup Cilantro Leaves

3 Tablespoons Fresh Oregano

4 Cloves Garlic

2 Tablespoon Red Wine Vinegar

1 Tablespoon Sherry or Balsamic Vinegar

1/2 Cup Extra Virgin Olive Oil

1/2 Fire Roasted Grilled Red Bell Pepper cut 1/4 dice

1 Tablespoon Red Chile Flakes (optional)

Salt and Pepper to Taste

In a food processor place the garlic and fresh herbs in the mixing bowl. Pulse a couple of times to chop, add vinegar run pouring olive oil in a thin stream slowly to incorporate. Pour into bowl add peppers, adjust salt and pepper and chill for one hour.

Pull out 1 hour prior to serving.

enough for 8 serving

Try serving these with a nice Malbec from Argentina or California.
