Had something like this in Hawaii. I rub the wahoo with Cumin and pan sear it in olive oil. I then add a dry white wine and a bit of chicken broth and let it steam. The first day I serve it with a quinoa dish and a slaw with cabbage,a local ranch dressing mixed with habanjero vinegar and again Cumin. Second day fish tacos with the slaw and green salsa.
