Grilled Ono Recipes

Ono is a fantastic fish for the grill and this is the place for some great Ono recipes from simple to the more exotic. The word Ono in Hawaiian means delicious and it definitely is from the grill. Best BBQ Chicken

We think that this recipe is the best BBQ chicken recipe for gas grills and it is even better on charcoal or wood. However the combination of the brine and easy smoky BBQ sauce make this recipe really good on the gas grill. There is always a conflict with serious grillers about gas vs. charcoal or wood. Alabama Chicken with White BBQ Sauce

I had been hearing about Alabama chicken and the  white BBQ sauce for a few years. Just never got around to giving it a try. Hmm, that was an error. Alabama chicken is an excellent recipe, flavorful with that nice crisp mahogany colored skin that is so amazingly good on chicken, then the white BBQ sauce with some horseradish zip. It's an excellent addition to anyone's personal grilling and BBQ cookbook!

Grilled Shrimp Creole

Creole and Cajun Cuisine was one of the first and is still one of the best regional American cuisines. The melding of the cultures and cuisines of Spain, Africa and France via the Caribbean has brought us fantastic flavors.  Shrimp Creole is another one of my rather eclectic comfort foods, I love the depth of layers of spices.

Many places claim to serve "original" Santa Maria Tri Tip but do not. Like most regional specialties there are many family recipes, but a few truths seem to hold with tri tip recipes. The classic is grilled or smoked with red oak wood.  It should be served with beans, salsa and garlic bread. This is a classic Santa Maria Style Tri Tip recipe. Try it you will love it.

Grilled Baby Back Ribs with Hoisin

These grilled baby back ribs are another comfort food for me. As a kid growing up in the San Francisco at one point I went to high school near fisherman’s wharf and I took the cable car on non-peak tourist times to school. That runs straight through Chinatown, and I used to love the energy and how different that part of the city was from well just about anywhere.

Grilled Lamb Loin Chops with Fresh Herbs, Arugula, and Mustard Meyer Lemon Vinaigrette

I really enjoy the flavor of lamb chops with Arugula, the peppery character of the arugula just works really nicely. This dish combines the classic flavors of the fresh herbs, mustard, the peppery arugula and a touch of Feta cheese for a modern classic lamb dish. It is also a very easy, and elegant way to serve grilled lamb chops. Great for entertaining or a nice dinner at home!

Grilled Flat Iron Steak with Red Pepper Chipotle Sauce

The Flat Iron steak is a very flavorful and tasty cut of beef that is perfect for grilling. It does great on the grill provided that you do not cook it too well done. It also lends itself to being sliced across the grain since it is not a particularly tender cut. Handled correctly it makes a great meal and also fairly easy for a crowd since it is a fairly large cut. The full flavor carries bold sauces well.

Grilled Diablo Canyon Salmon

This is a great grilled seafood recipe, it has grilled salmon choice of shellfish, bacon, avocado and smoky chipotle Hollandaise sauce. Ok, it really does not have anything to do with Diablo Canyon but in the name and that I was working there at the time. One thing I have noticed out there at Diablo Canyon though is if it has bacon and avocado, everyone loves it. If you are looking for an “over the top-show stoppin’” grilled seafood and great salmon with some spice to it, here you go! This starts off with a mildly spiced grilled salmon, topped with a smoky chipotle Hollandaise sauce, crisp bacon, avocado and your choice of shrimp, crab or as pictured langoustines-langastinos.
